Does anybody know how to turn off the copy and paste feature on the iPad, I keep activating it accidentally when scrolling around the page - it's very annoying.

There is no way that I know of in the user settings. It might be something you could do as part of a Jailbreak??? Perhaps feedback to Apple via their website.
