I am going back to Giffgaff after switching from them last summer to BT mobile (EE) for 4G. Since I left Giffgaff have obtained 4G in my area and I have found the EE network has very poor to non existent coverage where I work and is also very poor indoors in a lot of places. Also giffgaff is so flexible in that you can change your deal every month if it suits you. The only downside could be if the Three network takeover effects giffgaff in the future.

EE claims there is signal in my area but i find that claim to be an exaggeration. In fact only O2 works here. Although Three bought O2, they have no plans to actually combine spectra. I've never seen 4G on mine. one of my kids is with Three and he uses their wifi call facility.

You can use wifi-calling with EE, I do with my 6s Plus.
