Julian has told me never to respond to his posts - so would someone read this to him?: If the recipes are .pdf files - and can be isolated - any app that can read them can be used to transfer them [computer <> iOS device].

Hopefully the data is part of the iTunes backup. There are various backup data extractors around, I can't speak from personal experience on any of them I'm afraid. The data might well not be readable, but if you can get to it I could have a look to see what I could do.

If there is an option to print, you might print to PDF, not to the printer itself. (Mac, maybe not iPad though). Select all the individual PDFs in Finder, open. Select all in Preview - then print to PDF again and this time there will be multiple pages of one PDF document. There are many different possibilities for manipulating data, that's just one of them.
If there is an option to email one recipe at a time, that might be what you need to do.
Or screen grab each one.
Never keep all your eggs in one basket if you suspect the basket might disappear.
