Ah, genius... and not at all obvious! Very unlike Apple not to have some kind of indication of what to do.
Thank Chris - I got that you could toggle to that character by clicking the “.?123” key - thought there was a reason to having them displayed but couldn’t work it out

The keyboard problem mentioned above is said to be fixed in 11.1.1, out now.

Is anyone else disappointed that you can only record 10 second Animoji clips? Well I have an app for that. You can Sideload an app onto your device that lets you record long clips.
What you need to do is download an apps source code from GitHub and use Xcode to compile and codesign it before sideloading onto your device.

This may already be here, if so I apologise...
When you wake your iPad, there's the splash screen and you have to do Touch ID or passcode to get to your Home screen and start doing stuff. However, I've discovered that - just like with Siri - you don't need to do all that to use the camera. Just swipe right on the splash screen and there's your camera, ready to use immediately.

You may know this already, if so I apologise:
In Apple apps e.g. Pages/Notes etc, you can use the virtual keyboard as a trackpad, which is especially useful for moving the cursor in the absence of arrow keys. Just press and hold the spacebar, all the letters and numbers disappear and you can then move the cursor using your finger by dragging it to a new position.
(This may be only iPadOS - I can't check as I don't have a phone!)

If your Apple Pencil stops working but is still showing as connected under Bluetooth, it is probably an oh-so-slightly-as-you-wouldn't-notice loose nib. Tighten it and try again.
I just had that happen. It was fine this morning and just stopped. I powered off/on etc before searching this simple fix. D'oh!
