I awoke to find WatchOS 5.0.1 was available. It only took minutes to install.

I see we have iOS 12.0.1 already, mainly to fix XS issues.

It also puts the symbols key back where it was on the iPad. I didn't realise that it had moved but did keep pressing the wrong button to try and get the symbols.

When I unlock my screen on my iPad, I now get a "symbol" underneath the battery/WiFi icon in the upper-right-hand corner of the screen. It starts out as a grey line, which then moves down - making room for a double "on-off" looking control (one under the other). It disappears in about 3 seconds as the screen locks again, or if I press the Home button to wake it.
What is it?

It's the indicator for Control Centre. Swipe down from that corner to open.

I never noticed that before. It is very faint on my iPad; almost the same colour as the lock screen wallpaper.
That's my 'one thing earned' for today.

You can also customise what appears in Control Centre by going to Settings ▸ Control Centre ▸ Customise Controls.

That's old knowledge I'm not sure I like the change of swiping direction to get CC on iPad. They didn't change it on iPhone (my 8, even if they did for the X and up) so it is inconsistent.

Has getting the Control Centre by swiping up past the Dock disappeared in iOS 12 then?

Yes. It is down from the top right corner in 12 on iPad but still up on iPhone. Swipe up on iPad to get to the running apps screen (the Home button still does it too).
