I've found recently that Contacts on my phone is not a complete representation of Contacts on my Mac. I find quite often that one of my contacts is not on my phone but it is in Contacts on my Mac.
Why might my phone not be synchronising with my contacts, and how can I get it to do so once more?

No idea. First, turn then both off/on. Then I'd check iCloud settings on each device for Contacts, starting with the better stocked version. Good luck.

That was a great idea of Apple to remove the ability to sync Contacts via iTunes. Having accidentally deleted all Contacts from my wife's iPhone, I've just spent a couple of hours sharing each Contact from my MBP via WhatsApp to her iPhone and then creating a new Contact.

That's ridiculous! It must have taken you hours!! Were they not in iCloud? That's what confuses me. All my contacts are in iCloud which is why it is so odd that some are missing off my phone.
Well done for persevering though, but I guess you had some hefty threats hovering over your head?!

iTunes is dead to Apple despite it being still used by probably millions of people. I am sure the ability to sync contacts was removed a few years ago which obviously doesn't help you Dave.

Jonah, You are a genius! (& why didn't you say this before?!).
That's the one thing I didn't check – I never look at the Groups icon in Contacts since I have no need to (or so I thought!). The only option which was NOT selected out of many, was the top one – All iCloud. Why or how that had been deselected I have no idea; it certainly isn't my doing.
But now I'm wiser, and maybe others in this forum too.
An early Christmas present – thank you very much.

Dave - as I understand it... You sign in to YOUR iCloud on your wife's iPhone to sync the YOUR contacts. What do you do then? Do you sign out of your iCloud? Do you then sign into your wife's iCloud account on her iPhone? Does your wife have an iCloud account?
