Has anyone had their iPhone battery suddenly drop from a decent charge(say 60%) down to 1 or 2%, and then as soon as you connect to power it rapidly goes back to where it was? It happens to me occasionally and I can still continue to use the phone at 1% without it shutting down.

Your 5s will be up to nine years old so the battery may well be failing and mis-reporting the level. Have you tried connecting to a Mac and seeing what coconutBattery reports? Other utilities are available, I just know of that one. Assuming that powering it off/on didn't help.

These are typical symptoms of a worn out battery. Fairly easy to replace yourself for about £20 - www.ifixit.com for how to.

Had a new one fitted in town today, and it was £25 i including the price of the battery.

At that price, I question the quality/safety of that battery. Certainly, it isn't an Apple-approved one?

Not sure if you can get an Apple approved battery for a 5S these days.

For £25 all-in, if it lasts over 6 months I'd call that a win but I bet you get longer if you nurture it.
