I have lots of space on my phone (around 200GB) but little more than 1GB left on iCloud. I want to make a reasonably long video on my phone - around 20-30 minutes - which will easily fit on it but not in iCloud.
So I did what looked very easy, and in Settings/iCloud I switched off Photos. "That'll do the trick" I thought. But oh no. Apple being oh so very clever assumed quite wrongly that I was trying to save space on my device, not iCloud. I was offered two choices. 1. Remove from iPhone, or 2. Download photos and videos. WHAT?? NO!! I don't want either option. I want everything left exactly 'as is' but no future Photos to be synced with iCloud. Is that so difficult? Can I not do this?

Try settings>photos switch off iCloud and my photo stream from there. See how that goes.

Do you really need to switch off? If there isn't space on iCloud for any further photos or videos, it will not upload them.

MacBiter,
As you've probably discovered by now, the design of the iCloud Backup is to ensure that all one's Apple gadgets hold identical info. If you delete anything from iCloud, it will be deleted from everything else. It will warn you of that of course. It can be maddening but that is how it works.
