I took out the trial membership, and downloaded some books to my iPhone for free.

When I cancel the membership, will I lose those books?

If you go to the Amazon cancel Kindle Unlimited page, you see it states "Your membership remains active until the next billing date. After the billing date passes, you lose access to content that you have checked out", so yes to your question.
