I've not done this before, but when renting a movie, can I download the complete movie to my Mac, or do I have to watch it online?

Yep. I assume you want to rent film through iTunes? I have just rented two films to watch on my iPad as I am travelling to London today. Just be aware that once you start watching the movie you have 48 hours to watch it before it’s automatically deleted.

There is a smattering of software which allows one to download just about anything on/from the web. So it would be on your device, and not streamed (online).
is about the best. It works with YouTube.
